I'm size 10-12, large, but when looking at the sizing chart for the Canadian Goose Parka it specified chest between 41-43 is an XL. My chest measurement is 41.5. Should I order an XL ? It would still be a slim fit look ( 5''7/ 170 pounds) using size XL?

I would recommend always following the sizing chart. Different companies, especially in the outdoor industry, will change their fit and style depending on what they expect the fit of their customers to be, based on the activities they do and the countries they are from. If your measurements fit the X-Large profile, I would have to recommend getting the X-Large.
