Do these have a boot lace hook?

They do not have lace hooks, but do have grommets on both sides of pants for under the boot attachment.

Do these pants have internal gaiters? Basically, would these be okay for ski touring?

No, they do not. You can still use these for ski touring if you don't plan on tromping through deep snow without your skis or in the spring when the snow is more consolidated.
