The coating is a nonstick PTFE that will remain intact unless it is scratched.

The non-stick coating for this fry pan is standard teflon, an extremely resilient material that is very difficult to erode. Typical erosion patterns take years under frequent use, making any quantity which would make it into the food at the atomic level harmless.
