Is this MultiMat designed to be used as a ground cloth, i.e. under a bivy bag or to protect a sleeping pad? How durable would it be in this type of use for a extended (7 to 10 day plus)back-country trip?

Yes, it is designed to be used as a groundcloth and is very durable. It should be just fine for that kind of trip.

What are the dimensions of this un-folded?

The dimensions for this are 79 x 39 x 0.125 inches unfolded and it weighs 12 ounces. It's waterproof and made of closed cell EVA foam.
